Adobo

Philippine adobo is a classic Filippino dish that I grew up eating. Traditionally made with soy sauce, this recipe adapts easily to coconut aminos for those with soy sensitivities.

Ingredients

  • 1/2 onion, diced

  • 3-4 cloves garlic, sliced

  • Cut up chicken pieces, roughly bite sized

  • Coconut aminos

  • White vinegar

  • Black pepper

  • 3 to 4 bay leaves

  • White rice, cooked

Directions

  • Sauté several sliced cloves of garlic and half a diced medium onion in olive oil in a deep pot.

  • Throw in cut up chicken and sear until white on the outside.

  • Add equal parts of coconut aminos and vinegar (2-2.5 ladles of each), to taste. Add black pepper to taste. Add bay leaves. Add 1.5 cups of water.

  • Cover and let simmer on medium-high for 20-30 minutes. Serve over white rice.
