Black Beans and Rice
Ingredients
1t olive oil
1 onion, chopped
2 cloves garlic, minced
1 bunch cilantro, chopped
1c uncooked rice
2 cups vegetable broth
1t ground cumin
1t chili powder
1/2t salt
1/2t black pepper
1/2t cayenne pepper
2 cans canned black beans, drained and rinsed
1 can of corn
1 can tomatoes w/ chiles
Directions
In a stockpot over medium-high heat, heat the oil.
Add the onion and saute for 4 minutes.
Add the rice and garlic, saute for 2 minutes.
Add the broth, bring to a boil, cover and cook for 20 minutes on low heat.
Add the beans, tomatoes, corn, cumin, chili powder, cayenne, salt, pepper and cilantro, stir.
Continue warming on low for 10 minutes.
