Black Beans and Rice

Ingredients

  • 1t olive oil

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 1 bunch cilantro, chopped

  • 1c uncooked rice

  • 2 cups vegetable broth

  • 1t ground cumin

  • 1t chili powder

  • 1/2t salt

  • 1/2t black pepper

  • 1/2t cayenne pepper

  • 2 cans canned black beans, drained and rinsed

  • 1 can of corn

  • 1 can tomatoes w/ chiles

Directions

  • In a stockpot over medium-high heat, heat the oil.

  • Add the onion and saute for 4 minutes.

  • Add the rice and garlic, saute for 2 minutes.

  • Add the broth, bring to a boil, cover and cook for 20 minutes on low heat.

  • Add the beans, tomatoes, corn, cumin, chili powder, cayenne, salt, pepper and cilantro, stir.

  • Continue warming on low for 10 minutes.
