Bourbon Chicken

Ingredients

  • 1.5lbs chicken, cubed

  • 1T olive oil

  • Green onion, chopped

  • 1c uncooked rice

  • 1 garlic clove, minced

  • 1/4t ginger

  • 1/2t crushed red pepper flakes

  • 1/4c apple juice

  • 1/4c brown sugar

  • 2T ketchup

  • 1T apple cider vinegar

  • 1/3c coconut aminos

  • 1T potato starch

Directions

  • Cook rice.

  • Heat oil in a large skillet. Add chicken and cook until lightly browned.

  • Mix sauce ingredients in a bowl, then pour over chicken. Heat over medium-high and bring to a hard boil.

  • Cover, reduce heat and simmer for 15-20 minutes.

  • Mix potato starch with cold water and pour over chicken. Remove from heat and stir, do not boil.
