Bourbon Chicken
Ingredients
1.5lbs chicken, cubed
1T olive oil
Green onion, chopped
1c uncooked rice
1 garlic clove, minced
1/4t ginger
1/2t crushed red pepper flakes
1/4c apple juice
1/4c brown sugar
2T ketchup
1T apple cider vinegar
1/3c coconut aminos
1T potato starch
Directions
Cook rice.
Heat oil in a large skillet. Add chicken and cook until lightly browned.
Mix sauce ingredients in a bowl, then pour over chicken. Heat over medium-high and bring to a hard boil.
Cover, reduce heat and simmer for 15-20 minutes.
Mix potato starch with cold water and pour over chicken. Remove from heat and stir, do not boil.
