Buttermilk Pie
This pie melts in your mouth and couldn’t be easier. As a variation, add fresh sliced peaches in a round across the top when in season. Or toss some mini chocolate chips on top after the first 15 minutes of baking. When done, pie will not wiggle in the middle when shaken.
Ingredients
3 eggs, beaten
1 1/2 cup sugar
1/2 cup (1 stick) butter, melted and cooled to lukewarm
1 cup buttermilk (add 1 Tbsp vinegar to milk and let sit 1/2 hour)
3 Tbsp all-purpose flour
1 tsp pure vanilla extract
Directions
Whisk together sugar and flour
Add eggs, buttermilk, butter, vanilla and mix well
Pour into pie shell (deep dish if using frozen)
Bake at 400f for 15 minutes
Reduce temperature to 325f and continue baking 30-40 minutes
