Crock Pot Pulled Pork

Ingredients

  • 1 3-4 lb pork roast

  • 1/3 cup broth

  • 1/4 cup balsamic vinegar

  • 1/4 cup coconut aminos

  • 2t minced garlic

  • 2t potato starch

  • Salt and pepper to taste

Directions

  • Place roast in slow cooker. Whisk sauce ingredients (except potato starch) in a small bowl, then pour over roast.

  • Cook on low 8-10 hours for fall-apart, super tender roast (or high 4-6 hours).

  • Shred meat with two forks.

  • Whisk 2t potato starch with 2T cold water, pour over roast and stir.

  • Drizzle extra sauce over meat prior to serving.
