Keto Meatloaf
This is a great keto meatloaf that comes out juicy and flavorful. You can add chopped poblano or jalapeno peppers to add some extra spice and crunch.
Ingredients
2 pounds ground beef
1 egg
1/4t salt
1/2t black pepper
2t garlic powder
2t onion powder
1/2t thyme
1/2c almond flour (or pecan flour)
1/2c grated parmesan cheese
1/4c unsweetened ketchup
Directions
Preheat oven to 350f and line a baking sheet with foil (loaf will not crisp as well with parchment paper).
Whisk the egg, salt, pepper, garlic powder, onion powder and thyme in a large bowl.
Add the ground beef, almond flour, parmesan and mix using your hands until uniform.
Gently shape into a loaf and place on the prepared baking sheet.
Brush with ketchup on all sides.
Bake for 55 to 60 minutes. Let rest 5 minutes before slicing.
