Keto Meatloaf

This is a great keto meatloaf that comes out juicy and flavorful. You can add chopped poblano or jalapeno peppers to add some extra spice and crunch.

Ingredients

  • 2 pounds ground beef

  • 1 egg

  • 1/4t salt

  • 1/2t black pepper

  • 2t garlic powder

  • 2t onion powder

  • 1/2t thyme

  • 1/2c almond flour (or pecan flour)

  • 1/2c grated parmesan cheese

  • 1/4c unsweetened ketchup

Directions

  • Preheat oven to 350f and line a baking sheet with foil (loaf will not crisp as well with parchment paper).

  • Whisk the egg, salt, pepper, garlic powder, onion powder and thyme in a large bowl.

  • Add the ground beef, almond flour, parmesan and mix using your hands until uniform.

  • Gently shape into a loaf and place on the prepared baking sheet.

  • Brush with ketchup on all sides.

  • Bake for 55 to 60 minutes. Let rest 5 minutes before slicing.
