Oat Flour Chocolate Chip Cookies

This recipe is the perfect combination of a gooey center with a crispy outside.

Ingredients

  • 1/2 cup butter, room temperature

  • 1/2 cup light brown sugar, tightly packed, or coconut sugar

  • 1 egg

  • 2 tsp vanilla extract

  • 2 cups oat flour

  • 1 tsp baking soda

  • 2/3 cup dark chocolate chips

Directions

  • Mix together butter and brown sugar until no lumps of butter remain.

  • Stir in egg and vanilla extract.

  • Add oat flour and baking soda, stir until dough forms.

  • Fold in the chocolate chips.

  • Chill the dough in the fridge for 30 minutes (don’t skip!).

  • Preheat oven to 350f. Line baking pan with parchment paper.

  • Scoop 1” round balls onto lined baking pan. Place roughly 2” apart.

  • Bake for 10 to 12 minutes or until edges are slightly golden and center is set.

  • Allow to cool for 10 minutes before transferring to cooling rack.
