Oat Flour Chocolate Chip Cookies
This recipe is the perfect combination of a gooey center with a crispy outside.
Ingredients
1/2 cup butter, room temperature
1/2 cup light brown sugar, tightly packed, or coconut sugar
1 egg
2 tsp vanilla extract
2 cups oat flour
1 tsp baking soda
2/3 cup dark chocolate chips
Directions
Mix together butter and brown sugar until no lumps of butter remain.
Stir in egg and vanilla extract.
Add oat flour and baking soda, stir until dough forms.
Fold in the chocolate chips.
Chill the dough in the fridge for 30 minutes (don’t skip!).
Preheat oven to 350f. Line baking pan with parchment paper.
Scoop 1” round balls onto lined baking pan. Place roughly 2” apart.
Bake for 10 to 12 minutes or until edges are slightly golden and center is set.
Allow to cool for 10 minutes before transferring to cooling rack.
