Oatmeal Cookies

Makes 20-24 cookies.

Ingredients

  • 1/2c coconut oil, softened

  • 1/2c date sugar

  • 1 large egg

  • 1/2t vanilla extract

  • 1/2t baking soda

  • 1c oat flour

  • 1/4t salt

  • 1/2t ground cinnamon

  • 1 1/2c quick cooking oats

Directions

  • In a medium bowl, cream together coconut oil and date sugar. Beat in egg, then stir in vanilla. Combine oat flour, baking soda, salt, and cinnamon; stir into the creamed mixture. Mix in oats. Cover, and chill dough for at least one hour.

  • Preheat the oven to 375f. Grease cookie sheets. Roll the dough into tablespoon sized balls, and place 2 inches apart on cookie sheets. Flatten each cookie with a large fork dipped in sugar.

  • Bake for 8 minutes in preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
