Oatmeal Cookies
Makes 20-24 cookies.
Ingredients
1/2c coconut oil, softened
1/2c date sugar
1 large egg
1/2t vanilla extract
1/2t baking soda
1c oat flour
1/4t salt
1/2t ground cinnamon
1 1/2c quick cooking oats
Directions
In a medium bowl, cream together coconut oil and date sugar. Beat in egg, then stir in vanilla. Combine oat flour, baking soda, salt, and cinnamon; stir into the creamed mixture. Mix in oats. Cover, and chill dough for at least one hour.
Preheat the oven to 375f. Grease cookie sheets. Roll the dough into tablespoon sized balls, and place 2 inches apart on cookie sheets. Flatten each cookie with a large fork dipped in sugar.
Bake for 8 minutes in preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
