Sugar Free Oat Flour Blueberry Muffins

Can be served with honey or maple syrup for those that are not sugar-free. You can also add 3T poppy seeds or a pinch of ground cinnamon or ginger for a twist.

Ingredients

  • 2c oat flour

  • 3t baking powder

  • 1/2t salt (omit if using salted butter)

  • 1 large egg

  • 1c whole milk

  • 1/4c butter, melted

  • 1 to 2c blueberries

Directions

  • Grease your muffin tin.

  • In a large bowl, whisk together the flour, baking powder and salt.

  • Whisk the egg in a small bowl, then stir in the egg, milk and melted butter into the dry ingredients. Gently fold in the blueberries.

  • Spoon the batter into the muffin tin, filling each cup about 3/4 of the way full.

  • Preheat the oven to 375f and let the batter rest 15 minutes while the oven preheats.

  • Bake for 20 to 25 minutes, until a toothpick inserted into the center comes out clean.

  • Cool on a wire rack for 10 minutes before removing from muffin tin to finish cooling completely.
