Sugar Free Oat Flour Blueberry Muffins
Can be served with honey or maple syrup for those that are not sugar-free. You can also add 3T poppy seeds or a pinch of ground cinnamon or ginger for a twist.
Ingredients
2c oat flour
3t baking powder
1/2t salt (omit if using salted butter)
1 large egg
1c whole milk
1/4c butter, melted
1 to 2c blueberries
Directions
Grease your muffin tin.
In a large bowl, whisk together the flour, baking powder and salt.
Whisk the egg in a small bowl, then stir in the egg, milk and melted butter into the dry ingredients. Gently fold in the blueberries.
Spoon the batter into the muffin tin, filling each cup about 3/4 of the way full.
Preheat the oven to 375f and let the batter rest 15 minutes while the oven preheats.
Bake for 20 to 25 minutes, until a toothpick inserted into the center comes out clean.
Cool on a wire rack for 10 minutes before removing from muffin tin to finish cooling completely.
