Tabouli
Ingredients
1 cup quinoa-cook as instructed
2 bunches of parsley
1/2 cup chopped mint leaves
1 cucumber
2 Roma tomatoes
1/2 red onion
5 cloves of garlic
Juice of 2 lemons
Juice of 2 limes
1/4 cup olive oil
Salt and pepper to taste
Directions
Chop/dice all of your veggies and add to a bowl with the rest of your ingredients. Mix well, chill and serve!
