Tabouli

Ingredients

  • 1 cup quinoa-cook as instructed

  • 2 bunches of parsley

  • 1/2 cup chopped mint leaves

  • 1 cucumber

  • 2 Roma tomatoes

  • 1/2 red onion

  • 5 cloves of garlic

  • Juice of 2 lemons

  • Juice of 2 limes

  • 1/4 cup olive oil

  • Salt and pepper to taste

Directions

  • Chop/dice all of your veggies and add to a bowl with the rest of your ingredients. Mix well, chill and serve!
