Zucchini Au Gratin

Ingredients

  • 2 small zucchini thinly sliced

  • 2 small yellow squash thinly sliced

  • 3T butter

  • 1 large shallot diced

  • 1T minced garlic

  • 1/2c heavy cream

  • 1 1/2c shredded cheddar cheese

  • Salt and pepper to taste

Directions

  • Preheat oven to 350f.

  • Slice squash and place in a casserole dish sprayed with non-stick spray.

  • Melt the butter and saute the shallot until lightly browned.

  • Add the minced garlic and cook for about a minute.

  • Add the heavy cream, reduce heat and slowly add 1c shredded cheese while stirring.

  • Add salt and pepper to taste.

  • Pour cheese sauce over the veggies.

  • Sprinkle the remaining 1/2c cheese on the top.

  • Bake for 30 to 35 minutes until the cheese is browned and the veggies are tender.

  • Allow to cool for about 5 minutes before serving.
