Zucchini Au Gratin
Ingredients
2 small zucchini thinly sliced
2 small yellow squash thinly sliced
3T butter
1 large shallot diced
1T minced garlic
1/2c heavy cream
1 1/2c shredded cheddar cheese
Salt and pepper to taste
Directions
Preheat oven to 350f.
Slice squash and place in a casserole dish sprayed with non-stick spray.
Melt the butter and saute the shallot until lightly browned.
Add the minced garlic and cook for about a minute.
Add the heavy cream, reduce heat and slowly add 1c shredded cheese while stirring.
Add salt and pepper to taste.
Pour cheese sauce over the veggies.
Sprinkle the remaining 1/2c cheese on the top.
Bake for 30 to 35 minutes until the cheese is browned and the veggies are tender.
Allow to cool for about 5 minutes before serving.
